This Picnic really was brilliant, I packed this on a hot day over the summer and wanted to share some of the things that I think made it extra special.
I think it is very important to take lots of treats on a picnic so a big bag of crisps and some chocolate is essential. I went for some sea salt and balsamic vinegar Kettle Chips and some little crispy caramel chocolate bites.
I absolutely love pastry and little pasties are a favourite of mine. these ones were mini pepperoni pizza parcels (which are the best things ever) and some feta cheese and red pepper parcels, both of which were from Asda.
I also chopped up about half a cucumber into little sticks and packed some caramelised onion hummus which I would strongly recommend.
Now on to the things that I prepared myself.
Now the person I was on a Picnic with really quite fussy so I decided to stick to ham sandwiches on this one and I tried to make them look cute by cutting all the crusts off and cutting each sandwich into three little finger sandwiches. this was also useful as we had so much other food that we probably wouldn't have wanted a whole sandwich each. However if you are feeling more adventurous or are looking for a vegetation option I love filling sandwiches with hummus, pesto and either grilled peppers or sundried tomatoes.
The Drink really is the best part of this picnic and is a special recipe that I made myself after falling in love with a watermelon Mojito at a lovely restaurant called pesto near where I live. This one was a virgin Mojito as we were driving.
All you need is half a watermelon (you can see that I cut the other half into little quarters for us to eat) some sprite or 7up, some fresh mint, and two limes.
Simply Spooned the flesh of the watermelon into a blender and blend until it is a liquid, strain the liquid (this may take some time and it helps to have a hand to help you rub a spoon around in the sieve to help the juices go through quicker) then pour this liquid to fill about two thirds of your jug.
Fill to the top with your sprite or 7up and add the juices of two limes.
Just before serving add a few sprigs of mint to the just and a few leaves to your glasses.
Serve over ice for perfect refreshment.
